For breakfast, I had a few medium boiled eggs, and Kenney had some scrambled eggs.

For lunch, we all ate leftovers of some kind of soup.

I had the leftover coconut chicken soup from the other day, and it was made with boneless, skinless chicken thighs instead of chicken breasts this time…

Often, you can get thighs for much cheaper than breasts…And as we have been eating a lot of chicken breasts, it can add up! However, I prefer the chicken breasts in this soup, but I’m outnumbered…mom and Kenney both thought it was more flavorful with the thighs…Go figure!

Kenney had the leftover Moroccan chicken soup, and mom had the spicy creamed lentil soup.

For dinner, we are having that amazing tuna steak nicoise salad in dinner portion that we had the opportunity to make and eat last week! It was so delicious.

Don’t forget to stick to the rules when making the dressing. I used kefir instead of cream, sour cream or mayonnaise, add a little bit of freshly squeezed lemon, chopped chives or green onions, cayenne pepper, paprika, freshly cracked black pepper and some onion powder and you’re on your way!

Please be sure you’re drinking your fair share of water! Water is needed for numerous processes in the body, too many to even begin to calculate, and if you don’t have it, your body starts malfunctioning and doing weird things you don’t want it to.

Water is a highly under-estimated way to stay healthy and lose weight! Actually, it may be the most important???

P.S. Please be sure you’re drinking filtered water. Don’t just buy water in bottles at the store. You should have a way to filter water at home. Any filtering is better than not.
